The Keto diet or Low-carb diet can be difficult sometimes when it comes to bread and pastry making. Waffles are the easiest and fastest no miss bread substitute and this is my universal waffle recipe and it doesn’t take you more than 10 minutes to make. You can use it as sweet, savory, and toast. There are many recipes out there that can be used (chaffles) and I have tried many and I find them too flat or not keeping shape or even too dry.
Which waffle maker to use?
There are many waffle makers and I am sure all of them will work. I use the one with 4 square parts, that way I have fewer carbs per waffle, they are more resembling a toast and I like the look. You can get round small ones from Kmart or Warehouse for $20 and they will work well. I got myself a waffle-cup maker from Save Barn and it is really cool appliance. I like it more for cold sandwiches or sweets, as it keeps the food inside and doesn’t need to be toasted. Also, waffle-cups are lower in carbs as it goes 2/3 less of the batter then waffles.
I make always batch and freeze for myself for a whole week and they freeze really well. Best is to wrap 2 together and freeze like that, as it will be easier when you want only 1 or 2 to take out. Easy to tawn, leave in the fridge or for imitate consumption, just microwave 30 sec and then toast. To make a full nice, toast imitating crust, I heat up sandwich press (or in the pan) add mozzarella (or any melting cheese) and leave it until it forms golden cheese crust.
Make sure all your ingredients are room temperature. When it comes to cream cheese, I only use Philadelphia, as Anchor cream cheese has almost double carbs! This recipe will work if you don’t have psyllium and guar gum, just add one more teaspoon of baking powder. If you want to use only almond use 1c and if you want to use only coconut use 1/2c. I use a spray oil, as its really easy to evenly distribute the grease.
For sweet waffles, add 2tbs erythritol. Best when warmed waffles are served with sugar-free maple syrup. And for spinach waffles, blanch the spinach and drain all the water, add into the mix and add one more egg. On this amount, I use up to 200g spinach.
From this batch, you will have 10 waffles(square ones) or 30 cups.
180g cream cheese
6 eggs separated
1/2c Almond meal
1 /4c Coconut flour
1 tbs Psyllium husk powder
1 tbs baking powder
1 tbs Guar gum
Optional 1tbs Flax seed meal

Put your waffle maker on. With paddle attachment beat the cream cheese. Add egg yolks, almond flour, coconut flour, psyllium husk, baking powder, and Guar gum. Beat medium, then high speed. In another bowl whip egg whites till stiff. Add eggs whites to mix and beat shortly with the paddle attachment. Spray oil or other fat by choice to the waffle maker. Add 1.5 ice cream scoop and bake till done. Transfer to a wire rack till cool. Enjoy.
