Being on keto is hard when it comes to bakery products. One of the most missed and hardest to replace is bread. There is some bread in the supermarkets you can buy, but I will share with you the recipe that I find the most wholemeal bread-like bread and buns.
This bread is dairy-free and for vegans will work the same without eggs (denser, but the same flavor).
You can bake it in the loaf tin as a bread, but I find it way better if baked in muffin tins, as they really puff and stay like that. This recipe makes 12 muffins or 1 loaf. You can add to this recipe cheese, pesto, sundried tomato, nuts and seeds, LSA,…
Tip: You can experiment with flour ratio, but this recipe will not work without Psyllium husk powder as when activated with hot water, imitate gluten, and binds the dough.
100g Almond meal
100g Coconut Flour
10g Baking powder
500ml hot water
Put all ingredients in the food processor and mix till forms a dough. Bake on 180°C for 25-35 minutes. Take out on a wire rack to cool. Best when twice toasted. Keep chilled. Enjoy.
